Carrot and Pineapple Smoothie


Ingredients

50 g carrots, cut in pieces

400 g fresh pineapple, cut in pieces

80 g bananas, cut in pieces

2 sprigs fresh mint, leaves only

300 g water


Method


Blend it all together.


In Thermomix - Place carrots in mixing bowl and grate 4 sec/speed 7.Add pineapple, bananas, mint and water then blend 1 min/speed 9.





Mushroom Bolognese with Courgette Noodles


Ingredients

100 g pecorino cheese, cut in pieces (2 cm)

110 g onions, quartered

2 garlic cloves

60 g olive oil

200 g carrots, sliced (1 cm)

2 celery stalks, cut in pieces

500 g fresh oyster mushrooms, cut in pieces

400 g tinned chopped tomatoes

30 g tomato purée

2 fresh bay leaves

1 sprig fresh rosemary

4 sprigs fresh thyme

2 tsp sweet paprika

2 tsp caster sugar

2 tsp fine sea salt, plus extra to taste

½ tsp ground black pepper, plus extra to taste

800 g courgettes, cut in thin strips


Method


Grate pecorino cheese (Thermomix 15 sec/speed 10). Transfer to a bowl and set aside.

Chop onions and garlic (in Thermomix chop 5 sec/speed 5). Add oil and sauté until nicely done (Thermomix 5 min/120°C/speed 1.

Chop carrots and celery (Thermomix 10 sec/speed 4).

Add mushrooms, tomatoes, tomato purée, bay leaves, rosemary, thyme, paprika, sugar, salt and pepper and cook for around 20 minutes on the pan.

Cut the courgettes into thin strips and steam them so you can your courgette noodles ready at the same time as the bolognese sauce.


If you have a Thermomix, you can now place the Varoma dish into position then weigh in courgettes, ensuring some holes remain unobstructed for steam to circulate. Cover Varoma then steam 20 min/Varoma/reverse/speed 1.Set Varoma aside.


Remove rosemary, thyme and bay leaves from bolognese then season to taste.

Divide steamed courgette noodles between 4 bowls, ladle bolognese over each and sprinkle with reserved grated pecorino. Serve immediately.



Chocolate Dates Energy Balls


Ingredients

100 gr raw almonds

20 gr raw cashews

220 gr Pitted Dried Dates

2 tsp vanilla extract

65 gr desiccated coconut

20 gr cocoa powder or raw cacao powder

10 gr coconut oil (if it is a bit dry add 10g more afterwards)


Method

1. Process nuts in your blender (Thermomix 15 seconds on speed 10).

2. Add remaining ingredients & process in your blender until a nice mixture (Thermomix 30 seconds on speed 10)

3. Roll into ball shapes & roll in some extra coconut or dried fruits (I used strawberries for this one). Put into the fridge or freezer for 30 mins. Ready to eat!!
